Nasi Goreng Udang - Indonesian Shrimp Fried Rice
Nasi Goreng Udang, or Indonesian Shrimp Fried Rice, is a flavorful dish that combines cooked rice with shrimp, vegetables, and aromatic spices. Here's a simple recipe for you to try:
Ingredients:
- 3 cups of cooked rice (preferably cold or day-old rice)
- 200 grams of shrimp, peeled and deveined
- 3 cloves of garlic, minced
- 1 small onion, finely chopped
- 2 eggs, beaten
- 1 cup of mixed vegetables (carrots, peas, corn, bell peppers, etc.)
- 2 tablespoons of sweet soy sauce (kecap manis)
- 1 tablespoon of soy sauce
- 1 tablespoon of oyster sauce
- 1 teaspoon of shrimp paste (terasi), optional
- 1/2 teaspoon of ground white pepper
- Salt to taste
- Oil for cooking
- Sliced cucumber and tomato, for garnish (optional)
- Fried shallots, for garnish (optional)
- Sliced red chili, for garnish (optional)
- Lime wedges, for serving (optional)
Instructions:
Heat a little oil in a wok or large frying pan over medium-high heat. Add the beaten eggs and scramble until cooked through. Remove the scrambled eggs from the pan and set aside.
In the same pan, add a bit more oil if needed. Add the minced garlic and chopped onion, and sauté until fragrant and translucent.
Add the shrimp to the pan and cook until they turn pink and are cooked through. Remove the shrimp from the pan and set aside.
Add the mixed vegetables to the pan and stir-fry until they are cooked through but still crisp.
Push the vegetables to one side of the pan and add a little more oil if needed. Pour the sweet soy sauce, soy sauce, and oyster sauce into the empty space in the pan. Stir to combine the sauces.
Add the cooked rice to the pan, breaking up any clumps, and toss well to coat the rice with the sauce mixture.
Add the shrimp back to the pan, along with the scrambled eggs.
Add the shrimp paste (if using), ground white pepper, and salt to taste. Stir-fry everything together until everything is well combined and heated through.
Taste and adjust the seasoning if needed, adding more soy sauce or sweet soy sauce if desired.
Once everything is cooked and seasoned to your liking, remove the pan from the heat.
Serve the Nasi Goreng Udang hot, garnished with sliced cucumber, tomato, fried shallots, sliced red chili, and lime wedges if desired.
