Bakso Aci - (aci meatballs) Indonesian Street Food

 Bakso aci, also known as "aci meatballs," is a variation of the traditional Indonesian meatball soup (bakso) that features small, chewy tapioca flour balls. Here's a recipe to make bakso aci at home:


Ingredients:

For Aci (Tapioca Balls):

  • 1 cup tapioca flour
  • 1/4 cup boiling water
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • Water for boiling

For Meatballs (Bakso):

  • 250g ground beef or chicken
  • 2 cloves garlic, minced
  • 1 shallot, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon sugar
  • 1 tablespoon tapioca flour
  • 1 egg
  • Ice cubes (optional, for texture)

For Soup:

  • 1 liter beef or chicken broth
  • 2 cloves garlic, minced
  • 1 shallot, finely chopped
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)
  • Fried shallots for garnish (optional)

Instructions:

Making Aci (Tapioca Balls):

  1. In a mixing bowl, combine tapioca flour, salt, and ground white pepper.

  2. Gradually add boiling water to the flour mixture while stirring continuously until a dough forms.

  3. Knead the dough until it becomes smooth and pliable. If the dough is too dry, add a little more water. If it's too wet, add a bit more tapioca flour.

  4. Pinch off small portions of the dough and roll them into small balls, about 1/2 inch in diameter.

  5. Bring a pot of water to a boil. Drop the tapioca balls into the boiling water and cook until they float to the surface, about 2-3 minutes. Remove them from the water and set aside.

Making Meatballs (Bakso):

  1. In a mixing bowl, combine ground beef or chicken, minced garlic, chopped shallot, salt, ground white pepper, sugar, tapioca flour, and egg. Mix until well combined.

  2. If you want a springy texture, add a few ice cubes to the mixture and mix until the ice cubes are melted.

  3. Shape the meat mixture into small meatballs, about 1 inch in diameter.

  4. Bring a pot of water to a boil. Drop the meatballs into the boiling water and cook until they float to the surface and are cooked through, about 5-7 minutes. Remove them from the water and set aside.

Making Soup:

  1. In a separate pot, heat the beef or chicken broth over medium heat.

  2. Add minced garlic and chopped shallot to the broth and let it simmer for a few minutes to infuse the flavors.

  3. Season the broth with salt and pepper to taste.

Serving:

  1. To serve, divide the cooked tapioca balls and meatballs into serving bowls.

  2. Ladle the hot soup over the meatballs and tapioca balls.

  3. Garnish with chopped green onions and fried shallots if desired.

  4. Serve hot and enjoy your homemade bakso aci!
