KERAK TELOR - Crispy omelet and aromatic spices.

 Kerak Telor is a traditional Betawi (native Jakarta) dish in Indonesia, often found as a popular street food. It's essentially a spicy omelet made with glutinous rice, topped with fried shallots, and served with a dash of sweet soy sauce. Here's a recipe to make Kerak Telor:


Ingredients:

For the Omelet:

  • 100 grams of glutinous rice
  • 2 eggs
  • 2 tablespoons of grated coconut (fresh or desiccated)
  • 2 cloves of garlic, minced
  • 3 shallots, minced
  • 2 bird's eye chilies, finely chopped (adjust according to your spice preference)
  • 1/2 teaspoon of ground coriander
  • 1/2 teaspoon of ground white pepper
  • Salt to taste
  • Oil for frying

For Garnish and Serving:

  • Fried shallots
  • Kecap manis (sweet soy sauce)
  • Banana leaves for serving (optional)

Instructions:

  1. Soak the glutinous rice in water for at least 4 hours or overnight. Once soaked, drain the rice well.

  2. In a skillet or pan, dry roast the glutinous rice over medium heat until it becomes slightly golden and aromatic. Grind the roasted rice into a coarse powder using a grinder or mortar and pestle.

  3. In a bowl, beat the eggs and add the ground roasted rice, grated coconut, minced garlic, minced shallots, chopped bird's eye chilies, ground coriander, ground white pepper, and salt. Mix well to combine all the ingredients thoroughly.

  4. Heat a small non-stick frying pan over medium heat and grease it lightly with oil. Pour half of the egg mixture into the pan, spreading it evenly to cover the bottom.

  5. Cook the omelet until the edges are set and the bottom is golden brown. Carefully flip the omelet and cook the other side until golden brown and cooked through.

  6. Once cooked, remove the omelet from the pan and transfer it to a serving plate.

  7. Repeat the process with the remaining egg mixture to make another omelet.

  8. To serve, sprinkle fried shallots generously over the omelet and drizzle some kecap manis on top.

  9. Optionally, you can serve Kerak Telor on banana leaves for an authentic presentation.
