BATAGOR - Indonesian street food

Batagor, short for "Bakso Tahu Goreng," is another popular Indonesian street food. It consists of fried tofu filled with meatball (bakso) mixture, served with peanut sauce and sweet soy sauce. Here's a recipe to make Batagor:

Ingredients:

For the filling:

  • 250 grams ground beef or chicken
  • 1 egg
  • 2 cloves garlic, minced
  • 2 green onions, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • 1 tablespoon tapioca flour or cornstarch
  • Tofu blocks, cut into cubes (enough for filling)

For the batter:

  • 100 grams all-purpose flour
  • 50 grams rice flour
  • 1 egg
  • 200 ml water
  • Salt to taste

For the peanut sauce:

  • 100 grams peanuts, roasted and finely ground
  • 2 cloves garlic, minced
  • 2 red chilies, chopped (adjust according to your spice preference)
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1 tablespoon tamarind juice
  • Salt and sugar to taste
  • Water

For serving:

  • Fried shallots
  • Sweet soy sauce (kecap manis)
  • Lime wedges

Instructions:

  1. Prepare the filling:

    • In a mixing bowl, combine the ground beef or chicken, egg, minced garlic, chopped green onions, salt, ground white pepper, and tapioca flour or cornstarch. Mix well until all ingredients are combined.
    • Take a piece of tofu cube and carefully make a hole in the center to create space for the filling. Fill the tofu with the meatball mixture, ensuring it's well-packed.
  2. Make the batter:

    • In a separate bowl, combine the all-purpose flour, rice flour, egg, water, and salt. Mix until smooth and well combined to form a batter.
  3. Dip the stuffed tofu in the batter:

    • Heat oil in a deep fryer or a heavy-bottomed pot.
    • Dip the stuffed tofu into the batter, ensuring it's evenly coated.
  4. Fry the batagor:

    • Carefully place the battered tofu into the hot oil and fry until golden brown and crispy, about 3-5 minutes. Fry in batches if necessary.
    • Once cooked, remove the batagor from the oil and drain them on a plate lined with paper towels to remove excess oil.
  5. Make the peanut sauce:

    • In a saucepan, combine the finely ground peanuts, minced garlic, chopped red chilies, sweet soy sauce, tamarind juice, salt, sugar, and water. Cook over low heat, stirring constantly, until the sauce thickens slightly and the flavors meld together. Adjust the seasoning to taste.
  6. Serve:

    • Arrange the fried batagor on a serving plate and drizzle with peanut sauce and sweet soy sauce. Garnish with fried shallots and serve with lime wedges on the side.
