CIilok - Delicious Street Food

 Cilok is a popular Indonesian street food made from tapioca flour and served with a savory peanut sauce. Here's a simple recipe to make cilok at home:

Ingredients:

For Cilok:

  • 1 cup tapioca flour
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 1/4 cup fried shallots (optional)
  • Bamboo skewers or toothpicks for skewering

For Peanut Sauce:

  • 1 cup roasted peanuts, finely ground
  • 2 cloves garlic, minced
  • 2 red chilies, finely chopped (adjust to taste)
  • 2 tablespoons palm sugar or brown sugar
  • 1 tablespoon tamarind paste
  • 1/2 teaspoon salt
  • 1 cup water
  • 2 tablespoons sweet soy sauce (kecap manis)
  • Oil for sautéing

Instructions:

Making Cilok:

  1. In a mixing bowl, combine tapioca flour, salt, and white pepper. Gradually add water while stirring until a smooth and elastic dough forms. If the dough is too dry, add a little more water. If it's too wet, add a bit more tapioca flour.

  2. Knead the dough for a few minutes until it becomes pliable. If desired, mix in fried shallots for extra flavor.

  3. Divide the dough into small portions and roll each portion into a ball about the size of a marble.

  4. Bring a pot of water to a boil. Drop the tapioca balls into the boiling water and cook until they float to the surface, about 2-3 minutes.

  5. Remove the cooked tapioca balls from the water and drain them.

  6. Skewer the cooked tapioca balls onto bamboo skewers or toothpicks. You can skewer 3-4 balls on each skewer.

Making Peanut Sauce:

  1. Heat a bit of oil in a saucepan over medium heat. Add minced garlic and chopped red chilies. Sauté until fragrant.

  2. Add ground peanuts to the pan and continue to cook, stirring constantly, for 2-3 minutes until the peanuts are lightly toasted.

  3. Stir in palm sugar, tamarind paste, salt, and water. Bring the mixture to a simmer and let it cook for another 5-7 minutes until the sauce thickens slightly.

  4. Finally, add sweet soy sauce (kecap manis) to the sauce and stir well. Adjust the seasoning to taste.

Serving:

  1. Serve the skewered cilok with the peanut sauce on the side for dipping.

  2. Enjoy your homemade cilok as a tasty snack or appetizer!
