MARTABAK MANIS - Indonesian sweet pancake or stuffed pancake

 Martabak Manis, also known as Indonesian sweet pancake or stuffed pancake, is a popular street food in Indonesia. It's typically filled with a mixture of chocolate sprinkles, crushed peanuts, and sometimes cheese. Here's a basic recipe to make Martabak Manis:


Ingredients:

For the Batter:

  • 250 grams of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 2 tablespoons of granulated sugar
  • 1 egg
  • 300 ml of coconut milk
  • 100 ml of water
  • 2 tablespoons of melted butter or margarine

For the Filling:

  • Chocolate sprinkles
  • Crushed peanuts
  • Grated cheese (optional)
  • Condensed milk (optional)

For Topping:

  • Butter or margarine for greasing the pan
  • Condensed milk (optional)

Instructions:

  1. In a mixing bowl, sift together the all-purpose flour, baking powder, baking soda, salt, and granulated sugar.

  2. In a separate bowl, whisk the egg, then add coconut milk, water, and melted butter or margarine. Mix well until combined.

  3. Gradually pour the wet ingredients into the dry ingredients while whisking continuously until you get a smooth batter without lumps.

  4. Preheat a non-stick skillet or frying pan over medium heat. Grease the pan with butter or margarine.

  5. Pour a ladleful of batter into the pan, spreading it evenly to form a thin layer.

  6. Cook the batter for about 1-2 minutes or until bubbles form on the surface and the bottom is golden brown.

  7. Sprinkle chocolate sprinkles, crushed peanuts, grated cheese (if using), and condensed milk (if using) evenly over the surface of the pancake.

  8. Fold the pancake in half to enclose the filling, then cook for another 1-2 minutes until the filling melts slightly and the pancake is cooked through.

  9. Remove the Martabak Manis from the pan and transfer it to a serving plate. Repeat the process with the remaining batter and filling ingredients.

  10. Optionally, drizzle condensed milk over the top of the Martabak Manis before serving.

  11. Cut the Martabak Manis into slices and serve warm.
