MARTABAK TELOR
Martabak Telor is an Indonesian savory pancake filled with a mixture of seasoned ground meat, eggs, and sometimes other ingredients. It's a popular street food dish that's enjoyed as a snack or light meal. Here's a basic recipe to make Martabak Telor:
Ingredients:
For the Pancake Batter:
- 250 grams of all-purpose flour
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1 egg
- 300 ml of water
- Oil for frying
For the Filling:
- 200 grams of ground beef or chicken
- 2 cloves of garlic, minced
- 1 small onion, finely chopped
- 2 green onions, finely chopped
- 2 tablespoons of sweet soy sauce (kecap manis)
- 1 teaspoon of ground coriander
- 1/2 teaspoon of ground cumin
- 1/2 teaspoon of ground white pepper
- Salt to taste
- 4 eggs
- Oil for cooking
For Serving (optional):
- Cucumber slices
- Tomato slices
- Shallot sambal or chili sauce
Instructions:
Prepare the Pancake Batter:
- In a mixing bowl, combine the all-purpose flour, baking powder, and salt.
- Add the egg and water to the dry ingredients, and whisk until you have a smooth batter. Set aside.
Prepare the Filling:
- In a skillet or frying pan, heat a little oil over medium heat. Add the minced garlic and chopped onion, and sauté until fragrant.
- Add the ground beef or chicken to the pan, breaking it up with a spatula. Cook until the meat is browned and cooked through.
- Stir in the sweet soy sauce, ground coriander, ground cumin, ground white pepper, and salt. Cook for another 2-3 minutes to allow the flavors to meld together.
- Add the chopped green onions and cook for another minute. Remove the filling from the heat and set aside.
Make the Martabak Telor:
- Heat a non-stick skillet or frying pan over medium heat. Brush the pan with a little oil.
- Pour a ladleful of pancake batter into the pan, spreading it out thinly to cover the bottom of the pan.
- Crack an egg onto the center of the pancake batter and quickly spread it out slightly.
- Spoon a portion of the cooked filling onto one half of the pancake, covering the egg.
- Fold the other half of the pancake over the filling to form a half-circle shape.
- Cook the Martabak Telor for 3-4 minutes on each side, or until the pancake is golden brown and crispy, and the egg is cooked to your liking.
- Remove the Martabak Telor from the pan and drain on paper towels to remove excess oil.
- Repeat the process with the remaining pancake batter and filling ingredients.
Serve the Martabak Telor hot, sliced into wedges, and accompanied by cucumber slices, tomato slices, and shallot sambal or chili sauce if desired.
