Nasi Goreng Ayam - Indonesian Chicken Fried Rice

 Nasi Goreng Ayam, or Indonesian Chicken Fried Rice, is a delicious and popular dish in Indonesia. Here's a simple recipe for you to make it at home:


Ingredients:

  • 3 cups of cooked rice (preferably cold or day-old rice)
  • 2 chicken breasts, diced
  • 3 cloves of garlic, minced
  • 1 small onion, finely chopped
  • 2 eggs, beaten
  • 1 cup of mixed vegetables (carrots, peas, corn, bell peppers, etc.)
  • 2 tablespoons of sweet soy sauce (kecap manis)
  • 1 tablespoon of soy sauce
  • 1 tablespoon of oyster sauce
  • 1 tablespoon of tomato ketchup
  • 1 teaspoon of shrimp paste (terasi), optional
  • 1/2 teaspoon of ground white pepper
  • Salt to taste
  • Oil for cooking
  • Sliced cucumber and tomato, for garnish (optional)
  • Fried shallots, for garnish (optional)
  • Sliced red chili, for garnish (optional)
  • Lime wedges, for serving (optional)

Instructions:

  1. Heat a little oil in a wok or large frying pan over medium-high heat. Add the beaten eggs and scramble until cooked through. Remove the scrambled eggs from the pan and set aside.

  2. In the same pan, add a bit more oil if needed. Add the minced garlic and chopped onion, and sauté until fragrant and translucent.

  3. Add the diced chicken breast to the pan and cook until it's no longer pink and starts to brown.

  4. Add the mixed vegetables to the pan and stir-fry until they are cooked through but still crisp.

  5. Push the chicken and vegetables to one side of the pan and add a little more oil if needed. Pour the sweet soy sauce, soy sauce, oyster sauce, and tomato ketchup into the empty space in the pan. Stir to combine the sauces.

  6. Add the cooked rice to the pan, breaking up any clumps, and toss well to coat the rice with the sauce mixture.

  7. Add the shrimp paste (if using), ground white pepper, and salt to taste. Stir-fry everything together until the rice is heated through and evenly coated with the sauce.

  8. Return the scrambled eggs to the pan and stir-fry until everything is well combined.

  9. Taste and adjust the seasoning if needed, adding more soy sauce or sweet soy sauce if desired.

  10. Once everything is cooked and seasoned to your liking, remove the pan from the heat.

  11. Serve the Nasi Goreng Ayam hot, garnished with sliced cucumber, tomato, fried shallots, sliced red chili, and lime wedges if desired.
