Sate Tutut - Delicious Indonesian dish
Sate Tutut is a delicious Indonesian dish made with grilled or barbecued tiny freshwater snails (tutut), typically marinated in a flavorful sauce. Here's a basic recipe for Sate Tutut:
Ingredients:
For the Snail Marinade:
- 500 grams of tutut (tiny freshwater snails), cleaned thoroughly
- 2 tablespoons of sweet soy sauce (kecap manis)
- 2 tablespoons of soy sauce
- 2 cloves of garlic, minced
- 1 shallot, minced
- 1 tablespoon of brown sugar
- 1 tablespoon of tamarind paste dissolved in 2 tablespoons of warm water
- 1 teaspoon of ground coriander
- 1 teaspoon of ground cumin
- 1/2 teaspoon of ground turmeric
- Salt and pepper to taste
- Bamboo skewers, soaked in water for at least 30 minutes
For the Peanut Sauce (optional):
- 150 grams of roasted peanuts, finely ground
- 2 cloves of garlic
- 2-3 red chili peppers (adjust according to your spice preference)
- 2 tablespoons of palm sugar or brown sugar
- 1 tablespoon of tamarind paste dissolved in 2 tablespoons of warm water
- 1 tablespoon of sweet soy sauce (kecap manis)
- 1/2 teaspoon of salt
- Water (as needed to adjust consistency)
Instructions:
Prepare the Snail Marinade:
- In a bowl, combine the sweet soy sauce, soy sauce, minced garlic, minced shallot, brown sugar, tamarind water, ground coriander, ground cumin, ground turmeric, salt, and pepper. Mix well to create the marinade.
- Add the cleaned tutut snails to the marinade and toss until they are well coated. Cover and marinate in the refrigerator for at least 1 hour, or preferably overnight, to allow the flavors to penetrate the snails.
Prepare the Peanut Sauce (optional):
- In a blender or food processor, blend the roasted peanuts, garlic, red chili peppers, palm sugar, tamarind water, sweet soy sauce, and salt until you get a smooth paste. Add water as needed to adjust the consistency. Set aside.
Skewer the Snails:
- Thread the marinated tutut snails onto soaked bamboo skewers, dividing them evenly among the skewers.
Grill the Sate Tutut:
- Preheat your grill or barbecue to medium-high heat.
- Place the skewers of marinated snails on the grill and cook for about 3-4 minutes on each side, or until they are cooked through and slightly charred, basting with any remaining marinade as they cook.
Serve:
- Once the Sate Tutut is cooked, remove them from the grill and transfer to a serving plate.
- Serve hot with the optional peanut sauce on the side, along with steamed rice or as part of a larger Indonesian meal.
