Sempol Ayam - Indonesian street food
Sempol is another popular Indonesian street food snack made from meat, typically chicken or fish, that is seasoned, shaped into balls, skewered, coated with batter, and deep-fried until crispy. Here's a recipe to make sempol at home:

Ingredients:
For Sempol:
- 500g ground chicken or fish
- 2 cloves garlic, minced
- 2 shallots, finely chopped
- 2 green onions, finely chopped
- 1 teaspoon salt
- 1/2 teaspoon ground white pepper
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground turmeric (for color)
- 1/2 teaspoon sugar
- 2 tablespoons tapioca flour
- Bamboo skewers or toothpicks for skewering
For Batter:
- 1 cup all-purpose flour
- 1/2 cup tapioca flour
- 1 egg
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground white pepper
- 1 cup cold water
Oil for deep-frying
Instructions:
Making Sempol:
In a mixing bowl, combine ground chicken or fish, minced garlic, chopped shallots, chopped green onions, salt, ground white pepper, ground coriander, ground nutmeg, ground turmeric, sugar, and tapioca flour. Mix until well combined.
Divide the mixture into small portions and shape each portion into a ball or cylinder shape.
Skewer each shaped meatball onto bamboo skewers or toothpicks.
Making Batter:
- In a separate mixing bowl, combine all-purpose flour, tapioca flour, egg, baking powder, salt, ground white pepper, and cold water. Mix until smooth and well combined to form a thick batter.
Frying Sempol:
Heat oil in a deep frying pan or pot over medium heat until it reaches about 350°F (175°C).
Dip each skewered meatball into the batter, making sure it's evenly coated.
Carefully place the battered meatballs into the hot oil, a few at a time, and fry until they are golden brown and crispy, about 5-7 minutes. Make sure not to overcrowd the pan to ensure even cooking.
Once cooked, remove the fried sempol from the oil and drain them on paper towels to remove excess oil.
Repeat the frying process with the remaining skewered meatballs and batter.
Serving:
Serve the crispy fried sempol hot as a snack or appetizer.
You can serve sempol with your favorite dipping sauce, such as chili sauce or sweet and sour sauce.
