Instructions:
Making Sempol Ikan:
In a mixing bowl, combine chopped or minced fish fillets, minced garlic, chopped shallots, chopped green onions, salt, ground white pepper, ground coriander, ground nutmeg, ground turmeric, sugar, and tapioca flour. Mix until well combined.
Divide the fish mixture into small portions and shape each portion into a ball or cylinder shape.
Skewer each shaped fish ball onto bamboo skewers or toothpicks.
Making Batter:
- In a separate mixing bowl, combine all-purpose flour, tapioca flour, egg, baking powder, salt, ground white pepper, and cold water. Mix until smooth and well combined to form a thick batter.
Frying Sempol Ikan:
Heat oil in a deep frying pan or pot over medium heat until it reaches about 350°F (175°C).
Dip each skewered fish ball into the batter, making sure it's evenly coated.
Carefully place the battered fish balls into the hot oil, a few at a time, and fry until they are golden brown and crispy, about 5-7 minutes. Make sure not to overcrowd the pan to ensure even cooking.
Once cooked, remove the fried sempol ikan from the oil and drain them on paper towels to remove excess oil.
Repeat the frying process with the remaining skewered fish balls and batter.
Serving:
Serve the crispy fried sempol ikan hot as a snack or appetizer.
You can serve sempol ikan with your favorite dipping sauce, such as chili sauce or sweet and sour sauce.
