SPICY GADO - GADO

 Gado Gado is a popular Indonesian salad that features a mix of vegetables, tofu, tempeh, and hard-boiled eggs, all served with a flavorful peanut sauce. Here's a basic recipe for Gado Gado:

Ingredients:

For the Salad:

  • 200 grams of firm tofu, cut into cubes
  • 200 grams of tempeh, cut into cubes
  • 2 cups of mixed vegetables (such as cabbage, green beans, bean sprouts, carrots, cucumber, and spinach), blanched or steamed until tender
  • 2 hard-boiled eggs, halved
  • 1 medium-sized potato, boiled and cut into cubes (optional)
  • 1 small cucumber, sliced
  • Fried shallots or onions for garnish (optional)
  • Shrimp crackers (krupuk) for serving (optional)

For the Peanut Sauce:

  • 150 grams of roasted peanuts, finely ground
  • 2 cloves of garlic
  • 2-3 red chili peppers (adjust according to your spice preference)
  • 2 tablespoons of palm sugar or brown sugar
  • 1 tablespoon of tamarind paste dissolved in 2 tablespoons of warm water
  • 1 tablespoon of sweet soy sauce (kecap manis)
  • 1/2 teaspoon of salt
  • Water (as needed to adjust consistency)

Instructions:

  1. Prepare the Peanut Sauce:

    • In a blender or food processor, combine the roasted peanuts, garlic, red chili peppers, palm sugar, tamarind water, sweet soy sauce, and salt.
    • Blend until you get a smooth paste. If the sauce is too thick, you can add a little water to reach your desired consistency. Taste and adjust the seasoning if needed. Set the peanut sauce aside.
  2. Prepare the Salad Ingredients:

    • Steam or boil the tofu and tempeh cubes until they are cooked through. You can also pan-fry them for extra crispiness if desired.
    • Blanch or steam the mixed vegetables until they are tender but still crisp. Drain and set aside.
    • Boil the potato until tender, then cut it into cubes (if using).
    • Slice the cucumber and hard-boiled eggs.
  3. Assemble the Gado Gado:

    • Arrange the cooked tofu, tempeh, mixed vegetables, potato (if using), cucumber slices, and hard-boiled eggs on a serving plate.
    • Sprinkle fried shallots or onions over the top for added flavor and texture (if using).
  4. Serve:

    • Serve the Gado Gado with the prepared peanut sauce on the side.
    • Optionally, serve shrimp crackers (krupuk) on the side for extra crunch.
  5. To eat, drizzle the peanut sauce over the salad or dip each bite into the sauce.
