SPICY SEBLAK SETAN - Indonesian street food
Seblak Pedas is a popular Indonesian street food dish known for its spicy and flavorful broth filled with various ingredients like noodles, vegetables, meat, and crackers. Here's a basic recipe for Seblak Pedas:
Ingredients:
For the Broth:
- 1 liter of water or chicken broth
- 2 cloves of garlic, minced
- 2 shallots, minced
- 2 tomatoes, chopped
- 2 tablespoons of sweet soy sauce (kecap manis)
- 1 tablespoon of chili sauce or sambal (adjust to taste)
- 1 teaspoon of salt (adjust to taste)
- 1 teaspoon of sugar
- 1/2 teaspoon of ground white pepper
- 1/2 teaspoon of ground coriander
- 1/2 teaspoon of ground cumin
- 1/2 teaspoon of ground turmeric
- 1/2 teaspoon of ground ginger
- 2 kaffir lime leaves (optional)
- 1 lemongrass stalk, bruised (optional)
- Oil for cooking
For the Fillings (Choose your favorites):
- Instant noodles, broken into small pieces and cooked according to package instructions
- Chicken breast, thinly sliced
- Fish balls or meatballs
- Tofu, cut into cubes
- Tempeh, cut into small pieces
- Cabbage, shredded
- Carrots, julienned
- Green beans, chopped
- Corn kernels
- Fried shallots or onions for garnish
- Krupuk (shrimp crackers) for serving
Instructions:
Heat oil in a large pot over medium heat. Add minced garlic and shallots, and sauté until fragrant.
Add chopped tomatoes to the pot and cook until they are softened.
Pour in water or chicken broth and bring it to a simmer.
Add sweet soy sauce, chili sauce or sambal, salt, sugar, ground white pepper, ground coriander, ground cumin, ground turmeric, and ground ginger. Stir well to combine.
Add kaffir lime leaves and lemongrass stalk (if using) for extra flavor. Let the broth simmer for about 10-15 minutes to allow the flavors to meld together.
Add your choice of fillings to the broth, such as cooked instant noodles, sliced chicken breast, fish balls or meatballs, tofu, tempeh, shredded cabbage, julienned carrots, chopped green beans, and corn kernels. Cook until all the ingredients are heated through and tender.
Taste the broth and adjust the seasoning if needed, adding more salt, sugar, or chili sauce according to your preference.
Once everything is cooked and seasoned to your liking, remove the pot from the heat.
To serve, ladle the Seblak Pedas into serving bowls. Garnish with fried shallots or onions for extra flavor and texture.
Serve Seblak Pedas hot, accompanied by krupuk (shrimp crackers) on the side for extra crunch.
