SPICY TAHU GEJROT - popular street food

 Sure, Tahu Gejrot is a popular street food dish from Cirebon, Indonesia, consisting of fried tofu served with a sweet and tangy sauce. Here's a simple recipe for you to try:


Ingredients:

For the Tofu:

  • 400 grams of firm tofu, cut into small cubes
  • Oil for frying

For the Gejrot Sauce:

  • 4 shallots, finely chopped
  • 2 cloves of garlic, minced
  • 3-4 Thai bird's eye chilies, finely chopped (adjust according to your spice preference)
  • 3 tablespoons of sweet soy sauce (kecap manis)
  • 2 tablespoons of tamarind paste dissolved in 100 ml of warm water
  • 1 teaspoon of palm sugar or brown sugar (adjust to taste)
  • Salt to taste
  • Water (optional, for adjusting consistency)

For Garnish (optional):

  • Fried shallots
  • Chopped green onions or cilantro

Instructions:

  1. Heat oil in a deep frying pan or wok over medium heat. Fry the tofu cubes until golden brown and crispy. Once fried, remove them from the oil and drain on paper towels to remove excess oil.

  2. In a separate saucepan, heat a little oil over medium heat. Add the chopped shallots and garlic, and sauté until fragrant and golden brown.

  3. Add the chopped bird's eye chilies to the saucepan and sauté for another minute.

  4. Pour in the sweet soy sauce (kecap manis) and tamarind water mixture. Stir well to combine.

  5. Add palm sugar or brown sugar to the sauce and stir until it dissolves. Let the sauce simmer for a few minutes to allow the flavors to meld together.

  6. Taste the sauce and adjust the seasoning according to your preference by adding salt or more sugar if needed. If the sauce is too thick, you can thin it out with a little water.

  7. Once the sauce reaches your desired consistency and flavor, remove it from the heat.

  8. To serve, place the fried tofu cubes on a serving plate or in individual bowls. Pour the gejrot sauce over the tofu.

  9. Garnish with fried shallots and chopped green onions or cilantro if desired.

  10. Serve Tahu Gejrot immediately as a tasty appetizer or snack.
