SPICY TAHU WALIK - Twisted Tofu
"Tahu Walik" or "Twisted Tofu" is a unique Indonesian street food where the tofu is cut and twisted before frying, creating a pocket that can be filled with various fillings. Here's a basic recipe for Tahu Walik with a delicious vegetable filling:
Ingredients:
For the Tofu:
- 400 grams of firm tofu
- Oil for frying
For the Filling:
- 1 carrot, grated
- 1/2 cup of cabbage, thinly sliced
- 1/2 cup of bean sprouts
- 2 cloves of garlic, minced
- 2 shallots, minced
- 1 tablespoon of oyster sauce
- 1 tablespoon of soy sauce
- 1 teaspoon of sugar
- Salt and pepper to taste
- Oil for stir-frying
For the Batter:
- 1/2 cup of all-purpose flour
- 1/4 cup of cornstarch
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1/2 cup of water
Instructions:
Start by preparing the tofu. Carefully cut the tofu into thick slices, about 1-inch thick. Then, make a horizontal cut through the middle of each tofu slice, leaving about 1/4 inch uncut on one side, so the tofu remains intact but can be opened like a book.
Prepare the filling. Heat a little oil in a pan over medium heat. Add minced garlic and shallots, and sauté until fragrant.
Add grated carrot, sliced cabbage, and bean sprouts to the pan. Stir-fry for a few minutes until the vegetables are slightly softened.
Season the filling with oyster sauce, soy sauce, sugar, salt, and pepper. Stir well to combine and cook for another minute. Remove from heat and let it cool slightly.
Carefully stuff the tofu pockets with the vegetable filling, pressing gently to pack the filling inside.
In a shallow bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, and water to make the batter. Stir until smooth and well combined.
Heat oil in a frying pan or wok over medium heat.
Dip each stuffed tofu into the batter, coating it evenly.
Carefully place the battered tofu in the hot oil and fry until golden brown and crispy on both sides, about 3-4 minutes per side.
Once cooked, remove the tofu from the oil and drain on paper towels to remove excess oil.
Serve the Tahu Walik hot with chili sauce or your favorite dipping sauce.
