Tempe Bacem - delicious Indonesian dish

Instructions:

  1. In a bowl, mix together the minced garlic, sweet soy sauce, tamarind paste, palm sugar, salt, coriander powder, white pepper, turmeric, and ground galangal (if using). Stir until the palm sugar is dissolved.
  2. Place the sliced tempeh in a shallow dish or container and pour the marinade over it. Make sure all the tempeh slices are coated with the marinade. Let it marinate for at least 30 minutes, or for better flavor, marinate it overnight in the refrigerator.
  3. After marinating, heat a bit of oil in a pan over medium heat. Once the oil is hot, add the marinated tempeh along with the marinade. Add bay leaves as well.
  4. Pour water into the pan and bring it to a simmer. Let the tempeh cook in the sauce until the sauce thickens and the tempeh absorbs the flavors, stirring occasionally. This usually takes about 20-25 minutes.
  5. Once the sauce has thickened and the tempeh is tender, remove the pan from the heat.
  6. Serve the tempe bacem hot with steamed rice.
