TUTUT PEDAS - tiny freshwater snails with chili sauce
Tutut Pedas is a spicy Indonesian dish made with tiny freshwater snails cooked in a flavorful chili sauce. Here's a basic recipe for Tutut Pedas:
Ingredients:
For the Chili Sauce:
- 200 grams of dried red chilies, soaked in hot water and drained
- 4 cloves of garlic
- 3 shallots
- 2 tomatoes
- 1 teaspoon of shrimp paste (terasi), toasted
- 1 teaspoon of palm sugar or brown sugar
- Salt to taste
- Oil for frying
For the Snails:
- 500 grams of tutut (tiny freshwater snails), cleaned thoroughly
- 2 lemongrass stalks, bruised
- 2 kaffir lime leaves
- 2 bay leaves
- 1 tablespoon of tamarind paste dissolved in 100 ml of warm water
- Salt to taste
- Sugar to taste (optional)
- Water as needed
Instructions:
Prepare the Chili Sauce:
- In a blender or food processor, blend the soaked red chilies, garlic, shallots, tomatoes, shrimp paste, palm sugar, and salt until you get a smooth paste.
- Heat oil in a pan over medium heat. Add the chili paste and sauté until fragrant and the oil separates from the paste. Set aside.
Prepare the Snails:
- In a separate pot, bring water to a boil. Add the cleaned tutut snails and blanch them for a few minutes to remove any impurities. Drain and set aside.
- Heat a little oil in a large pan or wok over medium heat. Add the bruised lemongrass stalks, kaffir lime leaves, and bay leaves. Sauté until fragrant.
- Add the blanched tutut snails to the pan and stir-fry for a few minutes.
- Pour in the tamarind water and bring it to a simmer. Cook until the snails are tender, stirring occasionally. Add more water if needed to prevent the snails from drying out.
- Once the snails are cooked, add the prepared chili sauce to the pan. Stir well to coat the snails evenly with the sauce.
- Taste and adjust the seasoning with salt and sugar if needed.
- Let the Tutut Pedas simmer for a few more minutes to allow the flavors to meld together.
- Remove from heat and serve hot.
Serve:
- Transfer the Tutut Pedas to a serving dish.
- Serve with steamed rice and enjoy the spicy and flavorful dish.
Note: Tutut Pedas is a specialty dish that may not be available in all areas. If tutut snails are not accessible, you can substitute with other types of small shellfish or seafood like clams or mussels. Adjust cooking times accordingly. Additionally, be sure to clean the snails thoroughly before cooking.
